Only the best bunches from the healthiest vines were selected. Hand sorted in the winery before wild yeast fermentation with 100% whole bunches included. Held on skins for 8 weeks before pressing and maturation in old French oak. Bottled without fining or filtration. A perfumed, feminine Syrah. Match with duck confit. 55 Dozen produced 2007 Luke Lambert Reserve Nebbiolo Heathcote Shelf Price $75 Offer Price $63.00 Strict bunch sorting followed by wild yeast fermentation with extended maceration (75 days on skins) before gentle pressing. The 2007 Reserve Nebbiolo was matured in an old, French oak puncheon for 18 months, before bottling without fining or filtration, and a further 6 months in bottle prior to release. This wine needs extended decanter time to open up (5-7 hours).
